Hello. As I look out the west window, the full moon hangs in all its glory. As always, I am impressed that it is not altered, even a little, amid the changes and uncertainties of the world.

Take this – the moon has no light of its own. It happily reflects the sun. Unbelievable. This is exactly how I want to be – no light on my part, but steadfastly reflecting the Lord through the unfavorable seasons of life.

This leads a reader to wonder if we know of the kidnapped Mennonite group in Haiti. I don’t know them personally. My heart goes out especially to the children and the baby, wondering what they may be up against. I am comforted to know that surely God is always greater than any situation, and that he even cares more than any earthly being.

If I look at the trauma raging on all sides, there is no way to be filled with joy; as my eyes are on the Savior, I find a sense of peace that comes only from rest in Him who can keep us safe.

An unforgettable trip

When I hear about those held hostage, I think back and tell my children stories of when I was 14 and my parents, older brother and I took a long-awaited trip to Haiti to return. visit to my uncle and his family who did missionary work there. for a number of years. I still feel sick at the thought of visiting an orphanage owned by a native; these living conditions remain etched in my memory.

Little children could sing like a bird, but their eyes spoke of the trauma they had suffered. Having a sense of security not being alone at night, they would snuggle up together in bed with up to four children in a half bed. Even though I knew it wasn’t possible, I so wish life was just for their troubled hearts.

I was drawn to their simple way of life and their narrow paths connecting the small houses with thatched roofs. Our children dream of going to Haiti and helping one day. For now, our corner is at home. Maybe one day, when the children are older and the way is clear, we will give it a try.

With ears wide open, they listen to how most of these children in Haiti live their lives with just one meal a day, and how they are content with it. We take the opportunity to explain to them that while we tend to be unhappy with our wide array of food options, they are happy with their daily rice and beans and sometimes for a special occasion some meat or gravy. .

I will inject however that we have also witnessed this malnutrition due to a lack of rice and beans. I always go into the knots thinking about it. They had no choice but to be born into this framework. On several occasions, we have been invited to eat with Haitians at their home.

In front of the door of the little house where we ate, little children with big eyes were waiting, hoping to eat leftovers. The two little girls holding a plate between them are etched in my mind, which we handed to them and took turns biting until every bit was licked off the plate.

May I ever thank the Giver for all the good things and not be found to take care of the food, or anything for that matter!

Before being in Haiti, I thought I didn’t like rice and beans. I really enjoyed the way they did it. We adopted their recipe, and now we enjoy it here in our house.

Haitian Rice with Sauce

Pour the water, oil and seasoning into a medium saucepan. To boil; add rice. Stir then simmer for 10 minutes. Do not stir during cooking. Remove from the heat, cover and let stand another 10 minutes. Peel with a spoon and add the beans. Pour onto your plate and pour a generous portion of the following sauce on top. Very good!

Sauce:

2 cups of pizza sauce

1 cup of chicken broth

¾ teaspoon of garlic powder

¾ teaspoon of salt

¾ teaspoon of black pepper

½ tablespoon of real lemon

½ cup chicken, diced

½ cup potatoes, diced

½ cup carrots, sliced

½ cup cabbage, chopped

½ cup onions, chopped

Pour everything into a medium saucepan. Simmer until the vegetables are tender.

Note: These vegetables are all optional, use whatever you like. The Haitians also mixed a little flour with water and then formed small logs with this dough and threw them in the sauce. When the vegetables were cooked, the buns were also ready. They use large amounts of garlic in their cooking; do not hesitate to modify the seasonings to taste. I rarely use exact amounts when cooking.
